Schweinshaxe (literally 'swine's hock'), in German cuisine, is a roasted ossobuco-style pork knuckle especially popular throughout Bavaria. Our version pulls in a little bit of local flair with a maple-pecan glaze made with real maple syrup and Kill Devil Pecan Rum handcrafted by our local heroes, the masters of molasses at Outer Banks Distilling.
